Ingredients:
For the dough:
2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon ajwain seeds (optional)
1/4 cup ghee or oil
Water, as needed
For the filling:
1 tablespoon oil
1/2 teaspoon cumin seeds
1/2 cup finely chopped onions
1/2 cup finely chopped potatoes
1/2 cup finely chopped carrots
1/2 cup peas (fresh or frozen)
1/2 teaspoon ginger-garlic paste
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon red chili powder (or to taste)
Salt, to taste
Fresh cilantro, finely chopped
Instructions:
To make the dough: In a large mixing bowl, combine the flour, salt, and ajwain seeds (if using). Slowly add the ghee or oil and mix until the dough comes together. Slowly add water, a little at a time, until the dough is smooth and pliable. Knead the dough for about 5 minutes, then cover and set it aside for at least 30 minutes.
To make the filling: Heat oil in a pan over medium heat. Once hot, add cumin seeds and let them sizzle. Add the onions and sauté until they are translucent.
Add the ginger-garlic paste and stir for a few seconds.
Add the chopped potatoes, carrots, and peas. Stir to combine and cook for a few minutes.
Add the ground cumin, ground coriander, red chili powder, and salt. Stir and cook for a few minutes more, or until the vegetables are tender.
Remove from heat and stir in the chopped cilantro. Set aside to cool.
Divide the dough into equal-sized balls. Roll each ball into a circle about 3-4 inches in diameter. Cut each circle in half.
Take one half and make a cone shape by joining the straight edges by applying some water.
Fill the cone with the prepared filling. Seal the open edges by applying some water. Repeat the process for the remaining dough and filling.
Heat oil in a pan for frying. Once hot, carefully add the samosas to the oil and fry until golden brown, about 2-3 minutes per side.
Drain the samosas on a paper towel.
Serve warm with chutney or ketchup.
Note:
You can add any vegetables of your choice to the filling.
Adjust the spiciness level as per your taste preference.
You can also bake or air fry the samosas instead of frying them.
