Gulab Jamun is a popular Indian sweet made from deep-fried dough balls soaked in sugar syrup.

Ingredients:

1 cup khoya or mawa (reduced milk solids)
1/4 cup all-purpose flour
1/4 tsp baking powder
1/4 cup milk
1 cup sugar
1 cup water
2-3 green cardamom pods
2-3 saffron strands (optional)
Ghee or oil, for deep frying

Instructions:

In a mixing bowl, combine the khoya, all-purpose flour, and baking powder. Mix well.

Gradually add milk and knead the dough until it becomes smooth and soft.

Divide the dough into small balls, about the size of a ping pong ball.

In a saucepan, combine the sugar, water, cardamom pods, and saffron strands (if using). Bring to a boil and simmer for 5-7 minutes or until the sugar has dissolved and the syrup thickens slightly.

Heat ghee or oil in a deep frying pan over medium heat.

Carefully drop the dough balls into the hot oil and deep fry until golden brown.

Remove the gulab jamun from the oil and immediately transfer them to the hot sugar syrup.

Let the gulab jamun soak in the syrup for at least 30 minutes or until they have doubled in size.

Serve warm or at room temperature, garnished with chopped nuts if desired.
