Bhel puri is a popular street food from India, made with puffed rice, vegetables, and a tangy tamarind chutney.

Ingredients:

2 cups puffed rice
1 cup finely chopped onions
1 cup finely chopped tomatoes
1 cup finely chopped cucumber
1 cup finely chopped potatoes (boiled and cooled)
1/2 cup chopped cilantro
1/4 cup chopped mint
1/4 cup tamarind chutney (store-bought or homemade)
1/4 cup green chutney (store-bought or homemade)
1 teaspoon red chili powder
Salt, to taste
Oil, for frying (optional)
Sev (crunchy fried gram flour noodles) for garnish
Instructions:

In a large mixing bowl, combine the puffed rice, onions, tomatoes, cucumber, potatoes, cilantro, and mint.

Add the tamarind chutney, green chutney, red chili powder, and salt to the mixing bowl, and toss everything together.

Add the sev and mix everything together again.

If desired, you can heat a little oil in a pan and fry the mixture for a minute or two until it becomes crispy.

Serve the Bhel Puri immediately, garnished with extra sev and cilantro, if desired.

Note: You can also add in some finely chopped raw mango or green mango, if you like the tangy taste.
