Recipe for making Aloo Gobi in the Indian style.

Aloo Gobi is a popular Indian dish made with potatoes (aloo) and cauliflower (gobi).

Ingredients:

1 head cauliflower (gobi), cut into small florets
3 medium potatoes, peeled and diced
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon red chili powder
1 teaspoon garam masala powder
Salt, to taste
1/4 cup chopped fresh cilantro
Instructions:

Heat oil in a pan over medium heat. Once the oil is hot, add cumin seeds and mustard seeds. Allow them to crackle.

Add the diced potatoes and stir-fry for a few minutes until they start to turn golden brown.

Add the cauliflower florets, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and stir-fry for another 5 minutes.

Add 1/4 cup water, cover the pan with a lid and cook for 10-15 minutes or until the vegetables are tender.

Once the vegetables are cooked, add the garam masala powder and stir well.

Cook for another 2-3 minutes or until the spices are well blended and the vegetables are coated evenly.

Garnish with chopped cilantro and serve with chapatis, rice, or naan.

Note: You can also add 1 medium sized finely chopped onion and 1 medium sized finely chopped tomato to the recipe for an additional flavor.
